Martin Urena is a fourth-generation coffee farmer who directs La Chumeca Micromill, which specializes in the naturally sundried process. Some coffees at La Chumeca go through experiments in one of their twelve fermenting tanks before being sundried, and this coffee is one of them. The sugar content, pH, and temperature of the fermenting coffee cherry juice were checked every two hours in the fermenting tanks, then fully sundried for 20 days. Urena manages these scientific experiments keeping the end consumer in mind, crafting innovative coffees for us to enjoy. Sold as 8oz Black Bag Series.
